
Eldorado Road Beechworth Chardonnay 2025
Just our second release of Chardonnay from this Single Beechworth Vineyard planted to fabled white granite. We learnt a few of the quirks of this vineyard in 2024 giving us more of a chance to fine tune the wine second time around in 2025.
The result is a more tightly framed Chardonnay of greater complexity. Flavours of citrus, grapefruit rind and quince play in harmony with a vibrant minerality and flintiness.
Hand-picked and chilled overnight. We whole bunch pressed the cool bunches to tank and transferred to barrel within 24hrs. Some solids were transferred with juice to build texture and complexity.
100% barrel fermented, majority fermented wild with a small fraction inoculated. Malolactic was avoided for the most part with only a small fraction inoculated with a unique citrate negative malolactic bacteria. The wine was left on lees with little stirring for approximately 10 months. This is a tightly wound chardonnay set up for a long life ahead, cellaring will reward!
